I don't really have any great pictures or exciting things to blog about, but I figured it's time I share a little somethin'. So I am going to grace you with the marvelous Addie's Holy Shiz Carrot Cake recipe. You can thank me tomorrow after you've gathered ingredients and made it. Then a few days after that, you can curse me because you won't be able to stop eating it.
2 c. flour
2 tsp. baking soda
2 tsp. cinnamon
1/2 tsp. salt
3 eggs
3/4 c. oil
3/4 cup buttermilk
2 c. sugar
2 tsp. vanilla
1 8 oz. can crushed pineapple, drained
2 c. grated carrots
1 c. coconut
1 c chopped walnuts (optional)
Buttermilk glaze:
1/2 c. sugar
1/4 c. butter
1/4 t. baking soda
1 T. corn syrup
1/4 c. buttermilk
1/2 t. vanilla (dont add til you take it off the heat)
Cream Cheese Frosting:
1 stick butter, room temperature
8 oz. cream cheese, softened
1 t. vanilla
3-4 c. powdered sugar
Preheat oven to 350 degrees. Grease 9X13 pan. Sift flour, soda, cinnamon and salt together - set aside. In a large bowl, beat eggs. Add oil, buttermilk, sugar and vanilla; mix well. Add flour mixture (stir) and pineapple, carrots, coconut and nuts. Stir well. Bake for 45 minutes. While cake is baking, prepare glaze. Remove cake from oven, cool 5 minutes and spoon glaze over the top. Cool completely. Frost and refrigerate until frosting is set. May be refrigerated several days.

Here is a picture of my sweet princess in her Valentine's Day skirt. I am seriously obsessed with the pattern, which I found here. If I had more energy (we'll talk about that another time maybe, NOT PREGNANT) I'd just keep making them over and over.
You would think I would share a picture of my carrot cake but it really just looks like a normal carrot cake so there's nothing great to see. Okay, okay, you caught me, I have totally eaten over half of it by myself and I don't want you to see the proof of how piggish I've been! ;)

Love that skirt! I didn't know you were a sewer. And Violet's hair is getting so much darker!!! Otherwise it's just the lighting?

And are you sure you aren't pregnant? I mean you have clarified that you weren't pregnant in several posts now...just making me wonder! ;) haha Just don't get pregnant before you move...it will be the worst move of you life. Legit. I still get mad every time I think about how many times we have moved during this pregnancy...Ghent will probably never be forgiven for it!
